Leek & Potato Soup

Serves 4

  • 2 tbsp cooking oil
  • 1 tbsp curry powder
  • 2 cloves garlic
  • 1l veg stock

  • 3 medium white potatoes
  • 2 leeks
  1. Wash and chop 2 leeks, discarding greener leafy parts.

  2. Sauté leeks in 2 tbsp cooking oil until softened, 5-10m.

  3. Peel and dice 3 medium potatoes.

  4. Mince and add 2 cloves garlic. Cook 1m.

  5. Stir in 1 tbsp curry powder, 1l veg stock and add potatoes. Bring to a boil, then cover and simmer for 30m (or until potatoes are tender).

  6. Blend and serve!
