Serves 4
Wash and chop 2 leeks, discarding greener leafy parts.
Sauté leeks in 2 tbsp cooking oil until softened, 5-10m.
Peel and dice 3 medium potatoes.
Mince and add 2 cloves garlic. Cook 1m.
Stir in 1 tbsp curry powder, 1l veg stock and add potatoes. Bring to a boil, then cover and simmer for 30m (or until potatoes are tender).
Blend and serve!
