Harissa Lentil Spaghetti

  • 2 shallots
  • 5 garlic cloves
  • 2 carrots
  • 1 beef tomato
  • 1 tin green lentils
  • 350g egg pasta
  • 400ml passata
  • 3 tbsp harissa paste
  • 1 tbsp white miso paste
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 2 tsp Italian herbs
  • 1½ tsp ground cumin
  1. Finely dice:

    • 2 shallots
    • 2 carrots
    • 1 beef tomato
    • 5 garlic cloves
  2. Heat oil in a saucepan. Cook shallots and carrots for 10 mins till soft. Add garlic and tomatoes.

  3. Add to pan:

    • 1 tin green lentils (drained & rinsed)
    • 2 tsp Italian herbs
    • 1½ tsp ground cumin
    • Salt and pepper.
  4. After 1 minute, add and cook over gentle heat for 15 mins:

    • 400ml passata
    • 200ml hot water
    • 3 tbsp harissa paste
    • 1 tbsp white miso paste
    • 1 tbsp balsamic vinegar
  5. Meanwhile, cook 350g egg pasta in salted water, then serve together.
