Blended Chia Pudding

Makes 6-8 servings:

  • 1 cup chia seeds
  • 3 cups hazelnut or other non-dairy milk
  • 170g (just under ½ cup) honey or maple syrup
  • 3 tsp vanilla extract
  • ½ cup cacoa powder

Add all ingredients to a food processor or high-speed blender. Blend until completely smooth, scraping the sides down periodically.

Transfer to a container and allow to set in the fridge for at least 30 minutes (ideally overnight) before serving. The pudding will get thicker as it continues to set.

Serve with your favorite toppings like greek yoghurt, fresh fruit and seeds.
